Head Chef Landmark Hospitality


Job location: Carluccio's - Dubai Mall Dubai , UAE

Role Purpose

To ensure the outlet operates successfully and are individually profitable in accordance with the standard of the company using an efficient and modern style of kitchen management in all its section.


Responsibilities

  • To manage the shift and to make sure that the quality of food is to the correct standard and the timing is to the correct speed.
  • To have expert knowledge of all the recipes and preparation and cooking procedures for all sections within the kitchen operation.
  • To ensure the kitchen runs smoothly by following the correct systems and procedures.
  • To lead by example.
  • To actively motivate the team and individuals in the team by creating a stimulating, positive and energetic working atmosphere.
  • To actively encourage teamwork and team spirit and by offering excellent team support.
  • To communicate with the General Manager, the Managers, the team and individuals in a friendly, courteous and professional manner.
  • To take a “hands on” approach as appropriate to the needs of the business.
  • To take ownership for all tasks, duties and responsibilities assigned to you, ensuring they are completed on time and to the required standard.
  • To be proactive in solving problems as they occur and to stay calm and focused in such situations.
  • To deal with all customer complaints in a positive and professional manner with the view to ensure the customer leaves satisfied.
  • To actively strive to follow up all instructions or communications from a senior member of the team.
OPERATIONAL RESPONSIBILITIES:
  • To ensure all shifts are correctly set up, handed over and closedown by monitoring the standards as required and any deviations rectified immediately. Opening and closing checklists to be used.
  • To ensure that kitchen stock levels are maintained and that there are no shortfalls, to be achieved using par level sheets.
  • To ensure all employees are on time for their shift and to rectify any staff shortages. To ensure staff levels are correct for every shift by planning effective rostering within budget targets.
  • To liaison with all departments on an ongoing basis to ensure the smooth running of a shift.
  • To ensure the housekeeping and general appearance of the kitchen is to the correct standard at all times by ensuring cleaning rotas are being used and are present in the kitchen.
  • To be responsible for time keeping, breaks and appearance standards & hygiene of all staff and to take the appropriate, prompt action to ensure they met the required standards.
  • To be responsible for the security and control of all Company property, including food produce, fixtures, fittings, and equipment where applicable.
  • To control food costs by controlling wastage, staff feeding, errors, adherence to standard recipes, carelessness, stock security, etc.
Experience

Diploma/Degree in Hotel/Restaurant/Hospitality Management

6 to 10 years  Standalone restaurant experience

Skills
  • Have enthusiasm, drive and determination, demonstrate assertiveness and a passionate personality
  • Be able to develop and lead a team
  • Be focussed on the delivery of brand standards
  • A hands on manager who also likes to cook
  • Be able to communicate clearly but respectfully with team members
  • Must have solid experience in Thai cuisine
  • Branded experience an advantage
  • Hands on, focused on achieving the highest quality standard
